Hear Ye..Hear Ye

I have tried and I can't do it..I can't keep up with this blog..so..

Awesome Incredible Clam Chowder



I left the recipe for the cheese and onion biscuits on Baking Delights, so when you get done with drooling over this head over there to look at those. In our house you almost have to have the cheese and onion biscuits to go with the chowder

I battle the battle against all things fat. In other words, I don't want to lose out on taste by cutting calories. I would rather eat 1/4 c of rich, creamy chowder, than 2 cups of chowder made with skim milk. So don't expect to find low cal here. :)




Awesome Clam Chowder

2 large cans whole baby clams with juice
2 onions chopped
2 stalks celery chopped
1 clove garlic
3 tbs unsalted butter
2 potatoes, diced and cooked until just tender
2 c half and half
2 c heavy cream
2 c organic, free range chicken broth
1/4 c butter for garnishing

Saute the onion, celery and garlic in butter in a stockpot until soft. Add potatoes, clams, and chicken broth and simmer for 10 minutes to allow flavors to meld and the broth to reduce slightly..
Add half and half and cream and bring to a simmer for 15 minutes. You may add a tablespoon or two of flour to thicken it if you need to.
Now, put a ladle of the soup in warmed bowls, top with a pat of butter and salt and pepper to taste.
Servings vary. LOL!

Strawberry Jam


I made strawberry jam for the first time in several years yesterday. It was a little runny, I think due to the fact that one more time I tried a store brand of pectin (why???).
But ultimately it was everythign i remembered that strawberry jam should be. I have the recipe on Baking Delights, if you are interested.

I have noticed that lots of people are afraid of canning and jam making. I think this is sad, because it is such a rewarding part of cooking. The best way to learn to can is to learn from a person, so if you have a relative or friend that does it go help them out.

Menu Plan Monday


Not sure for the whole week...we have the VA tomorrow all day, then church wednesday and my grandaughter has a play Thursday night...and I am being taken out for my birthday on Friday (my birthday is not friday..it is 4/21) so that leaves Saturday...and Sunday..

Monday- Chicken and Rice




Tuesday- Pinto bean and Garlic Soup




Wednesday- Torta Rustica (It will be on baking delights...I haven't published it yet.)(Update..published...)

Thursday- Homemade acorn squash ravioli with pecan & Mascarpone (that will be for Presto Pasta, but am not sure whether it will be here or Baking Delights)


Oh, this? Mile High Buttermilk Cake with Orange Curd

Friday-Homemade Pizza for the family while I indulge in chinese food with my best friend.

Saturday-Pot roast
Sunday- Roast Chicken

I should do this for Wordless Wednesday


Kyrie is an 8th child. This means that she is the baby of a large family. She is unique. All my kids are but Kyrie...well....see for your self.
She and the dog were both asleep. The floor really isnt that dirty..the silt left from the flood has worn away the varnish on the floor....
