Roast Pork Loin with Orange-chipotle-honey glaze. YUMMY!
This was so good. I wanted something a little different and did not have a lot of time. I tossed the pork tenderloins into the oven to roast for about 45 minutes. While that was going on I started looking in the pantry for stuff to go with it. Does anyone besides me end up frantically trying to figure out what to serve with dinner?
O.k..I am editing this so if you think you read it yesterday and now it looks more..uh detailed..you are right. I had totally forgotten about the entry to the Joust. A pox upon me!

Anyway..here is the recipe...and officially my entry into the February joust.
2 1/2 cups orange juice
1/4 cup fresh lemon juice
1/4 c honey
1 tablespoon dried chipotle or other dried hot pepper
1 /2 tsp cinnamon
2 tbs pink peppercorns, cracked
1 teaspoon salt
1 tbs of cornstarch if absolutely necessary for thickening
1 can mandarin oranges, drained. Add the oranges as garnish.
3 lbs of pork tenderloin- Roasted until internal temperature reaches 155 degrees. Let stand 10 minutes. the temperature should hit 160 F during the standing time.
Make a reduction of the sauce ingredients. This should take about 3o minutes at a boil. Strain, and let stand while slicing the meat.
Arrange a couple of the medallions on a plate and garnish with the sauce.
