Presto Pasta Night!

I am in under the wire today! I am in a huge hurry, so I may have to come back and take care of spelling mistakes, or pictures. This is my entry in this weeks Presto Pasta Night Roundup.
I love homemade pasta. For lunch today we had Homemade rigatoni with a ground pork, pepper, and tomato sauce. It was fantastic! There is just something about the flavor and texture of pasta when it is homemade..

Homemade pasta dough:
About 4 cups of flour
5-6 eggs
Mix until dough looks crumbly but sticks together easily when you squeeze it. Run it thorugh your pasta maker as directed, with the rigatoni disc.
Cook for 2-3 minutes in salted boiling water. Drain.
Sauce:
2 c tomatoes
1 lb ground pork, browned
1 tsp chipotle
2 c chopped bell peppers
1 c onions
1/4 c fresh basil
a splash of red wine
salt and pepper to taste
Simmer for twenty minutes

My mon used to make this type of pasta with Rigatoni. Fond memories.
