Purple Potatoes for Princesses

Kyrie may not be a princess but don't tell her that. She will be in shock. ;)
The child loves all things purple. I had not really tried purple potatoes before but saw them in the local vegetable market and picket up a couple of pounds just to check them out. When you liv eiwht a princess you sometimes have to got he extra mile, you know? And I happen to live with three of them.
Anyway, so I got them, brought them home and gave them the ultimate test. Plain, boiled, salted potatoes. If a potato is good there is nothing better, but if it is one of the commercial, tasteless variety it is just...eww...insipid.
These potatoes were slightly sweet with a rich potato taste that screamed fresh and organic. Her majesty was skeptical at first, but quickly gobbled them up.
The next thing I am going ot try is the rose pik ones, I think that they would be pretty mounded together with the purple.
The purple potatoes do maintain their color, this picture was taken after boiling. I don;t know if I am up to purple potato soup. However. Lilac mashed potatoes does sound intriguing, don't you think?

These look like fun. You know they must be good for you with natures natural colors.I love how nature tips you off to good things.
I have done roasted potatoes with a combination of white, red and blue/purple potatoes tossed with olive oil and rosemary, and it looks festive and tastes great! And don't let anyone tell Kyrie she is not a princess!
I have not seen the purple potatoes here, but I did see white broccoli the other day. I was tempted to buy some but don't know. I may yet. I bet those purple potatoes would be lovely in a nicoise salad!
