Awesome Incredible Clam Chowder



I left the recipe for the cheese and onion biscuits on Baking Delights, so when you get done with drooling over this head over there to look at those. In our house you almost have to have the cheese and onion biscuits to go with the chowder

I battle the battle against all things fat. In other words, I don't want to lose out on taste by cutting calories. I would rather eat 1/4 c of rich, creamy chowder, than 2 cups of chowder made with skim milk. So don't expect to find low cal here. :)




Awesome Clam Chowder

2 large cans whole baby clams with juice
2 onions chopped
2 stalks celery chopped
1 clove garlic
3 tbs unsalted butter
2 potatoes, diced and cooked until just tender
2 c half and half
2 c heavy cream
2 c organic, free range chicken broth
1/4 c butter for garnishing

Saute the onion, celery and garlic in butter in a stockpot until soft. Add potatoes, clams, and chicken broth and simmer for 10 minutes to allow flavors to meld and the broth to reduce slightly..
Add half and half and cream and bring to a simmer for 15 minutes. You may add a tablespoon or two of flour to thicken it if you need to.
Now, put a ladle of the soup in warmed bowls, top with a pat of butter and salt and pepper to taste.
Servings vary. LOL!

Ohh, I wish I could eat clams. Unfortunately I am allergic to shellfish. However it does look good and I do make a mean fish chowder. I'm with you on the fat as well...I'd rather eat less of something that tastes rich and the way it should, than a huge bowl of the watered down de-fatted version of the same.

Serve your clam chowder with the clamcakes you posted a while back and you've got a great New England lunch/dinner! now i've got a craving...good thing I'm going home to Rhode Island on Saturday!

I haven't tried it, but I've heard that using evaporated skim milk as a substitute for cream works okay if you've got someone who must have low fat.

I like cheese and onion.This types of foods are contains too much calories but I don't want to lose out on taste by cutting calories.

Ditto on the fat thing! (Unless I'm cooking for someone with dietary restrictions, of course.)

I love clam chowder - can't remember when I last had it! My husband is allergic to shellfish, so it doesn't get made at home, obviously. You need to have me over for lunch! Ha.

ohmygosh...that photo is tempting. I think I need to make some clam chowder for dinner tomorrow. We traditionally make clam chowder for family get together on christmas eve, and I rarely make it any other time. I have no idea why..that recipe looks superb.
